Some dishes come together with one last move. A freshly cooked egg, still warm, gets a small serving of caviar just before it reaches the table. The yolk brings softness; the pearls bring a cool, savoury contrast. To notice both, cook first, turn off the heat and open the tin once everything else is ready.

Fried eggs: make room for the caviar

Fry the egg as you like it and move it to a plate. If crisp edges are part of the pleasure, let them show: they add texture without complicating the bite. Place the caviar on a patch of white or beside the yolk, never in the frying pan. You can try a little egg on its own first, then bring egg, yolk and caviar together on your fork. A small piece of toast is useful for the yolk, but the plate needs little else.

Season the egg lightly and taste before adding more. The caviar already contributes to the balance of the dish. If you are cooking several eggs, finish each one close to serving time. Bringing them to the table while they still look and taste inviting matters more than arranging an immaculate composition that has waited too long.

Scrambled eggs: soft, not scorching

For scrambled eggs, cook to the texture you enjoy and take the pan off the heat while they are still soft. Divide them among small plates and spoon the caviar on top, away from the heat, where each person can choose how much to take with a forkful. Stirring the pearls through completely makes the contrast between warm egg and cool caviar harder to notice.

How much to serve, and when to open the tin

There is no compulsory amount for this dish. Decide whether you want an accent in each bite or a more generous tasting, multiply that amount by the number of guests and choose a tin accordingly. Ten grams let you try the combination on a small scale; 50 g give you more room to share. These are quantities of caviar, not promises about portions. Keep the tin as its label directs until serving and use clean utensils.

The best finish is straightforward: the table is ready, the eggs have just been cooked and the caviar goes on at the last moment. Serve at once and let each guest decide how much egg and how many pearls belong in the next bite.
