Three zeros stand out on a small lid. At Cofré, 000 is part of the commercial name Imperial Beluga iraní 000. It names this selection; by itself, it is not a key to the species, country of origin or lot. To understand what you are holding, separate the product name from the traceability details that identify the caviar.

What the name can tell you

The name helps you recognise Cofré's selection in conversation, on a product page or in a gift. It does not establish a universal scale on which more zeros automatically mean better flavour. Nor does it predict the precise colour or size of every pearl, or what another maker's tin will taste like. The name alone cannot support those conclusions.

When comparing products, do not use 000 as a shortcut for ranking different brands. First ask what each tin contains and how it has been stored. Then you can talk about texture, intensity and finish with a specific product in mind, rather than an isolated number.

Where to find the species

Beluga is the Huso huso sturgeon. On a universal CITES caviar label, HUS is the code for that species. The system also records source, country of origin, year, establishment and lot. Those fields help trace the caviar's identity. The three zeros replace none of them and should not be read as though they were a CITES code.

You need not decipher a label alone. If an online listing leaves important details unclear, ask the seller for the species, provenance and information that will accompany the tin. A precise answer is worth more than a persuasive adjective.

Where taste begins

Once the tin is open, look at the pearls, serve a small spoonful and taste the caviar on its own. Notice how each pearl yields and what flavour remains. There is no need to produce a perfect tasting note. Two or three words of your own will do more to help you remember the experience and choose again.

Take your time with the first tin

If this is your first tin, a small size can give you room to pay attention without turning the tasting into a ceremony. Keep it as the label instructs and open it when you are ready to eat it. The 000 stays on the lid; at the table, what matters is a properly identified product and the time to taste it for yourself.
